Flank Steak
Flank steaks are located below the loin. They are lean, very flavorful and best when braised, or marinated and grilled. Sold per pound.
Liver
Ground beef - approximately 1 lb pkgs
This is 80/20 ground beef. It makes wonderful flavored hamburgers or chili. There is barely enough fat to just keep it from sticking to the pan, but not enough to drain! Our packages are approximately 1 lb pkgs, weight may per package. Sold by the pound.
Beef Kidney
Beef kidneys are a lean edible organ meat that is a provides bioavailable vitamins & minerals. It is considered a delicacy in some areas. Kidneys may be served alone or as additions in other dishes, such as kidney stew or kidney pie. Sold per pound.
Beef Heart
Beef heart is an excellent source of many B vitamins, including riboflavin, niacin, vitamin B5 and vitamin B12. It is also an excellent source of the minerals iron, phosphorus, and selenium, and it contains highly bioavailable zinc as well. Beef heart is a lean cut, best cooked quickly such as flash frying or grilling or long stew method over low heat such as heart stew in the slow cooker. Sold by the pound.

We are now taking reservations for our grassfed beef will be available for Pickup in October 2024. It will be $4.50 lb. hanging weight, which is approximately 145 lbs. for 1/4 the steer. Hanging weight will vary per animal. Processing fee is due to the processor and is $18 for kill fee plus .95 cents a lb. We will deliver to the processor, located at Mayes County Processing in Pryor, OK. You will be responsible for processing fees.

Stew Meat
Beef stew meat is cut into small cubes or pieces and is specifically designed for use in stews. These make wonderful comfort meal for the winter served with crusty bread. I love to brown my stew meat with onions and then slow cook them all day or to make a beef and barley stew. Delish!!
Rib Eye Steak
Rib-eye steaks are tender, juicy and very flavorful, with just the right amount of fat. Fast cooking methods using high heat produce the most delectable results. They are wonderful cooked on a charcoal grill.
Sirloin Tip Steak
Sirloin tip comes from the Round primal at the front end of the steer’s hindquarters. This lean cut is budget-friendly. It has a slight amount of fat (the sirloin is considered a slice of semi-fat meat) and is a bone-free meat ideal for grilling, sliced, and English roast beef.
Beef tongue
It can be boiled, pickled, roasted or braised in sauce. It is found in many national cuisines, and is used for taco fillings in Mexico and for open-faced sandwiches in the United Kingdom. It a tender meat and is high in fat and in vitamin B.
Fajita Meat - Skirt Steak
Fajita meat is traditionally from the skirt steak. It's a quick meal and super simple to make at home. I love it served from the grill or stove top with blistered peppers, caramelized onions and for an extra flair - I add fresh grilled pineapple. It just makes my mouth water thinking about it!
